Do you carve pumpkins at your house? The boys and I have done this since before they could even understand it. There is something about the ooeey, gooey pumpkin guts all over the place that we enjoy so much. Over the years I would just throw it all out and not think twice about it. Then a friend asked why I never roasted the seeds. I kind of laughed at her and then said something about it being to much work. Then I researched it and realized, it was WAY simpler and way more fun then just buying them.

Rainbow has been really excited about having pumpkin seeds. The last thing she said to me when heading to bed last night was, “Mom you’re going to cook those seeds while I’m sleeping, right?”

Yes, I know Halloween is over… but that just means that there are lots of  leftover pumpkins lurking around for dirt cheap. Also, I’m fond of the smaller, sweeter, pie pumpkins which are to be found this time of year. Time to hit the market!

They look delicious right? I thought so too. Your kids will think your the coolest and you will have a nice healthy snack for the whole family. Sounds like a win/win to me.     I often read about people soaking the seeds. I’ve never tried it, perhaps this will be the year. I just rinse, pat dry, season, and in the oven right away. Turn out great every time! I also roast the seeds from just about any squash we bake, mostly spaghetti squash. As long as they look worthy.

      Thanks for the tip we have spaghetti squash at least once a week will try the seeds next time!

    Seems my roasted seeds never turn out as good as other peoples

        I`ve tried so many different ways over the years and still not that good
